Beef Casserole

Description

Warm up with this rich flavoursome beef casserole.

Ingredients:

400g Lean beef steak (Rump)

250g Mixed frozen vegetables

1-2 Stock cubes, Crumbled

250ml Tomato or Vegetable juice, Hot

2 Tbsp parsley, Chopped

Method
  1. Beat the steak with a mallet until it is an even thickness. Pierce the steak a few times with a fork and cut the steak into 2.5cm cubes.
  2. Place the cubed meat into the 2.25 litre Starmaid Casserole  cooker. Add the frozen vegetables, stock cube and juice.
  3. Cover and cook on Medium High (70-80%) for 10 minutes.  Allow to stand for 5 minutes.
  4. Sprinkle with parsley and serve over mashed potatoes.
