Coconut Lime Rice

Description

Fragrant rice reminescent of a tropical island, with an aroma that will put your tastebuds in overdrive.

Ingredients:

1 cup long grain rice

1/2 Lime

165ml Can coconut milk

1 Tbsp Coriander for garnishing

 

Method
  1. In the 1.5 litre Vogue Rice Cooker, place rice and squeeze over the juice from the lime.
  2. Pour coconut milk into the 1.4 litre Vogue Microwave Jug and  add water to make up 2 cups of fluid. Cook on High (100%) for 2 minutes then pour over rice.
  3. Leave the rice cooker uncovered, cook rice on High (100%) for  10 minutes, stirring once.
  4. Stir rice through, cover rice cooker and cook on High (100%)  for 2 minutes.
  5. Garnish with coriander and serve with your favourite curry.

Hot Tip

To turn 2 cups of cooked rice into a sweet baked custard, in the base of a 750ml Vouge dish, place 2 cups of cooked rice then pour over 170mg mango pulp mixed with egg. Dust with cinnamon, cover and cook on High (100%) for 4 minutes. Serve with yoghurt.
